I had a great opportunity to teach aspiring chefs, through C.A.S.T, a local community organization that offered a seven week restaurant hospitality course for high school seniors. In spice class 101, my lecture was on herbs and spices, what herbs to use and when to use them. The best tasting grilled chicken cutlet won a $100 gift card to my restaurant, The Hellenic Snack Bar.
