:: TACO CUPS RECIPE
1 lb ground turkey or beef
1 15oz can refried beans
1 15oz can red enchilada sauce
1 – 2 cups cheddar cheese (or mexican blend)
favorite taco toppings… In this video I used shredded lettuce, guacamole and salsa. I also made a few vegetarian taco salad cups using the refried beans, 1/2 can of black beans and a few black olives. They were delicious!

1. place your wrappers in a muffin tin. Spray with a little cooking spray and bake at 350 degrees for 5-7 minutes. This helps crisp up the bottom of the cups. While your wrappers are baking, brown up your ground beef and open up all your cans.
2. assemble your taco cups, minus the toppings of course… and bake at 350 degrees for 10-15 minutes until wrappers start getting golden.
3. top with your favorite taco toppings, enjoy!
