INGREDIENTS:
* Poha (पोहा) – 1 big bowl
* Hot water (गर्म पानी) – as required
* Salt (नमक) – less 1/2 tsp
FOR FILLING:
* Potato (आलू) – 3-4
* Onion (प्याज)
* Green chili (हरी मिर्च)
* Coriander leaves (धनिया पत्ती)
* Salt (नमक) – as per taste
* Chili powder (लाल मिर्च पाउडर) – 1/2 tsp
* Roasted Cumin Powder (भुना जीरा पाउडर) – 1/2 tsp
* Coriander powder (धनिया पाउडर) – 1/2 tsp
* Garam Masala (गरम मसाला) – 1/4 tsp
* Mango powder (अमचूर पाउडर) – 1/2 tsp
* Oil (तेल) – 1 tsp
* Fennel seeds (सौंफ) – 1/2 tsp
* Asafoetida (हींग) – 1 pinch
* Turmeric powder (हल्दी पाउडर) – 1/2 tsp
* Oil (तेल) – for frying
RECIPE:
Take some Flattened Rice (Poha) and wash them. Then put some Hot Water in the washed Flattened Rice and dip them properly then cover them and keep them aside for 10-15 mins.
Then take out them in a strainer and drain out the extra Water.
Mash the Flattened Rice with the masher and add some Salt in it. Bind the dough of it and cover the dough with a wet cloth and keep it aside.
For Filling, mash some Boiled Potatoes, put some finely chopped Onion, Green Chilies, Coriander Leaves, Salt, Red Chili Powder, Roasted Cumin Powder, Garam Masala Powder and Mango Powder in it.
Keep a pan on the flame, put some Oil, Fennel Seeds and Asafoetida in it and then turn off the flame and put some Turmeric Powder in it.
Put the Tadka on the Potato Filling and mix them all. Then make the Rolls of the filling.
Take some part of the Flattened Rice Dough, press it with hands, put the filling in it and cover it from all sides. In the same way, make ready all the Rolls. Wrap the Rolls with the Semolina and fry the Rolls in the heated Oil.
In this way, crispy and crunchy Flattened Rice Rolls will get ready to serve.
