So I was in a baking mood after watching a bunch of videos from Kim Wad (TheWads: ) and Jen Chapin ( )! This wasn’t the best time since everybody was panic-buying at the grocery store, but luckily I was able to grab oatmeal and a small bag of flour! Woo!

I’m posting the recipes, but I only used them as inspiration!! I didn’t really measure everything, I just found these recipes more for the general idea of ingredients, not for the measurements 🙂

Protein Blueberry Oatmeal Muffins
* 1 cup(ish) blueberries (fresh or frozen)
* 2 eggs
* 2 cup rolled oats, old fashioned
* 2 bananas, medium ripe (I used apple sauce and I eyeballed it of course)
* 1 cup brown sugar (I used some Splenda)
* 1 teaspoon baking powder
* 1 teaspoon vanilla extract
* Protein powder
* 1/4c flour
* Flaxseed

Soft Baked Banana Oatmeal Bars (HA! I overbooked these so they were..crispy.)
* 1 cup mashed banana, from 2 medium overripe bananas (I used applesauce)
* 1/2 cup coconut oil, melted (I used vegetable or canola oil)
* 2/3 cup honey
* 1 egg, lightly beaten
* 2 teaspoons pure vanilla extract
* 2 1/2 cups rolled oats
* 1 1/4 cup flour
* 1/2 teaspoon cinnamon
* 1/2 teaspoon salt

No bake peanut butter balls: (these were our favorite!! I’m going to make them in a bar form instead of balls so my hands don’t get sticky, not that it’s a big deal)
– Peanut butter
– Honey
– Oats
– Chocolate/peanut butter chips
– Ground flaxseed optional (I can’t remember if I used them in this recipe or not.. but you can if you want!)
