My kids and I LOVE making this Healthy Chocolate Fudge Cake for Easter.
It’s seriously simple, gluten-free (it just uses almond or hazelnut meal) and is so fun to decorate with Easter bunnies. At the end of the video, I show you a bunch more ways to decorate it, so be sure to watch to the end.
To make the cake, all you need it:
200g dark chocolate, broken into pieces (*note my homemade chocolate option below)
150g salted butter, cubed
2/3 cup sugar, I use rapadura
5 eggs
1 tsp vanilla
2 cups almond or hazelnut meal (use whole nuts and blend in a food processor if you don’t have enough)
1 tsp baking powder
To make the cake:
STEP 1: Pop the oven onto 180°C and line a small round cake tin (20cm) with baking paper and pop to the side.
STEP 2: Gently melt the butter and chocolate over a water bath in a saucepan. Stirring every so often until it’s just melted and smooth.
STEP 3: Meanwhile, in a large bowl, whisk sugar, eggs, baking powder and vanilla together. Then add the melted chocolate mixture and whisk lightly. Add the nut meal and stir until just combined.
STEP 4: Pour the cake mixture into the tin and cook for about 40 minutes or until just cooked. It is like a brownie, slightly gooey and soft in the middle. Allow to cool in the tin for 15 minutes, and then pull it out and let it cool completely on a wire rack.
* If you’d like to make your own homemade chocolate I used: 180g cocoa butter melted with 20g cocoa powder and 3 tbsp maple syrup.
