What better way to get your kid to eat healthy food than getting them involved in the cooking process? Especially now while the Corona Virus is keeping us all at home, this would be a fantastic and simple recipe to allow your children to be part of something fun, delicious yet healthy.
Good and healthy food starts with good ingredients. As you can see, this recipe asks for a few fresh and wholesome ingredients. My very ripe mangos were very sweet to start out with. If your mangos are not super sweet, you may want to consider adding a little more sugar in here. But when possible, I try to use natural ingredients to sweeten up the dish.
What is Agar Agar? Agar-Agar works just like gelatin but it is plant-based and made out of seaweed. It is a little difficult to source Agar Agar locally in my area. I usually purchase it online. But if you have gelatin on hand, that would work perfectly.
If you are using Agar-Agar, I would recommend whisking the Agar Agar in with the water BEFORE turning on the stove. You want to try to dissolve it as much as you can. Once the water heats up, Agar-Agar powder has the tendency to clump up easily so whisking it in cold or room temperature water first would work best.
Ingredients:
8 oz. Mango Purée
1/2 cup Star Fruit Juice
2 TBSP Agar-Agar
1 piece Lime Juice
1 1/4 cup Water
1/4 cup Sugar
Instructions:
-Add water to pot – room temperature if possible
-Add Agar Agar powder
-Whisk Agar Agar with water and try to dissolve as much as possible BEFORE turning the stove on.
-Add Starfruit juice / Orange juice
-Add Lime juice
-Whisk Whisk Whisk
-Bring it to a boil
-Add Mango Purée
-Boil it for 1-2 minutes on medium heat
-Pour Mango Jelly into a silicon form
-Put in the refrigerator for at least 30 minutes
