Perfect for athletes and people looking to lose weight in general. Meal prep doesn’t have to be difficult or expensive. This meal planning is incredibly budget friendly (cheap) and will last almost all week. This sweet potato & veggie bowl recipe gives you the flexibility to mix up the style from mexican, italian, salad etc. Experiment with this nutritional meal plan for endurance athletes and enjoy it all week.
If you are trying to control your hunger ALL DAY LONG, then this meal prep recipe is perfect. It delivers a solid dose of healthy cards…the low carb thing is NOT right for everyone and absolutely insane for athletes of any level.

Ingredients:
1 cup uncooked rice of choice
2 sweet potatoes
1 Sweet red onion
1 can of black beans (drained & rinsed)
1 can of mexican style corn (drained & rinsed)
2 tablespoons of Olive Oil
Salt & Pepper

Instruction:
Set oven to 425 degrees F
Chop Sweet Potatoes and Onions in roughly 1 inch squares
Place on a large cookie sheet and toss with Olive Oil and S&P
Cook 12 minutes
Prepare 1 cup of uncooked rice as instructed on rice package
Turn Veggies with spatula
Add Corn & Beans to cookie sheet and mix
Return to oven for 15 minutes at 425f
Mix cooked rice and cooked veggies and enjoy
