This easy and healthy chicken recipe is a filling Moroccan-style casserole that contains lovely fiber-rich chickpeas. This low carb low-calorie recipe can be served with a large portion of green beans or a generous leafy salad. A portion of quinoa can be a great addition as it is full of fiber and other good nutrients.
Recipe ingredients
2 tbsp olive oil
1 medium onion
3 boneless chicken thighs/breasts 400g
1 1/2 tsp ground cumin
1 1/2 tsp ground coriander
1/4 tsp cinnamon powder
1 red pepper
400g can chopped tomatoes
400g can chickpeas
5 dried apricots chopped
1 chicken stock cube or 300ml chicken broth
fresh coriander to garnish
