Paushtic Paratha

Get your kids to eat unpopular vegetables by disguising them in these nutritious parathas. curds help to get soft parathas serve these vitamin A and folic acid rich parathas with a bowl of curds to get protein and calcium also.

Preparation Time: 10 minutes.
Cooking Time: 25 minutes.
Makes 15 parathas.

1 cup finely chopped spinach (palak)
¼ cup grated carrot
1½ cups whole wheat flour (gehun ka atta)
¼ cup besan (Bengal gram flour)
4 tbsp curds (dahi)
2 tsp green chilli paste
1 tsp oil
Salt to taste
Whole wheat flour (gehun ka atta) for rolling
3¾ tsp oil for cooking

For serving
Fresh curds (dahi)

1. Combine all the ingredients in a bowl and knead into a semi-soft dough using enough water.
2. Divide the dough into 15 equal portions.
3. Roll out each portion into a 100 mm. (4”) diameter circle using a little wheat flour for rolling.
4. Fold into half to make a semi-circle and again fold into half to make a 100 mm. (4”) length triangular paratha.
5. Heat a non-stick tava (griddle) and cook it, using ¼ tsp of oil, till brown spots appear on both the sides.
6. Repeat steps 3 to 5 to make 14 more parathas.
Serve hot with fresh curds.
