This Video contains 5 Chutneys / Roti Pachadis that are easy and quick to make.
I. Tomato & Carrot topped with Raw Tindora.
Ingredient List:
3 to 4 chillis (more or less depending on spice)
1 Tbsp oil (I used olive oil)
2 big or 3 small carrots
1 large tomato
1/4 cup tindora
1 Small lemon sized tamarind
1/2 tsp salt
2 cloves garlic
1/2 Tsp cumin
4 strands of coriander
I used food processor but blender can also be used. For chunky consistency in a blender, use pulse mode. Raw tindora is used to get the crunchy texture. Using it is optional.
II. Plantain & Yogurt Pachadi
Ingredients:
3 Medium sized plantains
3 Chillis (more or less depending on spice)
1 small lemon size tamarind
1 Tbsp oil (I used Olive Oil)
2 Cloves Garlic
1/2 tsp cumin
1 tsp salt
1/3 cup yogurt
4 strands of coriander
1/4 cup raw onions
I used food processor but blender can also be used. For chunky consistency in a blender, use pulse mode.
III. Roasted Red Pepper and Peanut Pachadi
Ingredients:
1 Red Pepper
1 Tomato
3 chillis (more or less depending on spice)
1/4 Onion
1 cup peanuts
1 Small lemon sized tamarind
1/2 cup coriander
2 cloves garlic
1 tsp cumin
1 tsp salt
1 cup water (more if needed)
Tadaka Ingredients: 1 tsp urad dal, 1 tsp mustard seeds, 1 tsp cumin, 1/4 tsp methi seeds, 2 strands curry leaves, 3 red chillis, pinch of hing, 2 tbsp oil.
I used blender to blend it into a fine paste. This pachadi goes well with dosa and idli items.
IV. Granny Smith Apple Chutney
Ingredients:
3 Granny Smith Apples
1 tsp turmeric
1 tsp salt
1 tsp dried mango powder
1 tbsp sugar
4 to 5 strands of coriander
Tadaka Ingredients: 1 tsp urad dal, 1 tsp mustard seeds, 1 tsp cumin, 1/4 tsp methi seeds, 2 strands curry leaves, pinch of hing, 2 tbsp oil, 3 tbsp red chilli flakes.
Note: Cook Apples immediately after grating to avoid color change.
V. Raw Mango and Sweet Potato Pachadi
1 Mango
1 Sweet Potato
1 tsp salt
4 to 5 strands of coriander
Tadaka Ingredients: 1 tsp urad dal, 1 tsp mustard seeds, 1 tsp cumin, 1/4 tsp methi seeds, 2 strands curry leaves, 2 tbsp red chilli flakes, pinch of hing, 2 tbsp oil.
