Today we are making 3 different healthy jams from scratch: strawberry jelly, blackberry + blueberry jam, and vanilla peach preserve. All 3 are made with different fruit, healthy sweeteners, and have different textures.
STRAWBERRY JELLY
4 cups strawberries
¼ cup of lemon juice
1 tsp of lemon zest
½ cup coconut sugar
¼ cup cold water + 4 tsp grass fed gelatin powder
BLACKBERRY + BLUEBERRY JAM
2 cups Blueberry
2 cups of Blackberry
¼ cup lemon juice
1 tsp lemon zest
½ cup lakanto sweetener
3 tbsp black chia seeds
VANILLA PEACH PRESERVE
4 cups peaches
¼ cup lemon juice
4 tsp calcium water
1 vanilla bean
½ cup grade A (light) maple syrup
3 tsp pectin powder
