Fitness is the key to success. Good and nutritious food keeps the body and mind motivated and healthy. So this is an awesome, low-fat recipe to make a delicious and healthy thai green curry!
Ingredients:-
1/2 tsp coriander powder
1 tsp whole cumin seed(or powder)
1/2 tsp whole black peppercorns(or powder)
3 small green chilies
1 medium green bell pepper (stems and seeds removed // chopped)
7 cloves garlic, peeled
2 stalks lemongrass
2 Tbsp fresh sliced ginger or galangal
4 stalks spring onions
1 Tbsp turmeric powder
3 Tbsp lemon juice
5 tbsp olive oil
2 Tbsp sugar
1 small white onion, diced
3 carrots, peeled and sliced on the diagonal into ¼-inch wide rounds (to yield about 1 cup sliced carrots)
200 ml coconut milk
½ cup water
2 cups packed baby spinach, roughly chopped
1 ½ teaspoons vinegar or fresh lime juice
1 ½ teaspoons soy sauce
200gm tofu/paneer/chicken
Garnishes: handful of chopped fresh coriander, spring onions and red pepper flakes, to taste
