This kind of bread is very common in some popular bakeries but with a little bit of practice and efforts , we can just make this at the convenience of our own home. ( Recipe credit to Bincy Chris – from her Artisan rustic bread with cranberries and walnuts )

INGREDIENTS:
3 cups of Bread flour or all purpose flour
1 cup mixed Raisins ,seeds and nuts (whatever you’re not allergic to :))
1/2 cup another mixed seeds and nuts only(for toppings) , raisins will get burnt easily

280 ml lukewarm water
1 tsp salt
1 tbsp honey or sugar
1 tsp dry yeast

Steps:
1.In a big clean bowl, pour water, add in salt and dissolve properly before you add honey next and yeast. Mix them well!
2. Gradually add and mix the flour until you form a round, wet and sticky dough.
3. Add 1 cup mixed raisins, seeds and nuts then mix again until all ingredients well combined. Cover your bowl with cling wrap or with dry kitchen towel. Rest and Ferment dough for 1 hour so you can move on with your other activities while waiting.
4. After one hour,(TIP: wet your hands each time you work the dough so it won’t stick) stretch and fold the dough for 6-8 times at this stage so the bread will become soft and airy at the end even without kneading. Cover it again and ferment for another 30 mins.
5. After 30 minutes, just do the stretching and folding technique again for 4 times. Cover . Rest and Ferment for another 30 mins. (2 hours total of fermentation)
6. For the meantime, prepare a medium size round bowl ,on top with parchment baking paper.
7. 30 minutes passed, finally the final folding ! (just repeat step #5) then transfer your dough to a medium bowl with baking paper.
8. Top your dough with the remaining half cup mixed seeds and nuts. Cover with towel and rest for 45 minutes for final proofing.
9. Meanwhile, Preheat your oven at 230’c with round aluminum pot with cover inside or dutch oven if you have one. We will bake our bread with it. In the bottom part of your oven, also place an extra tray or another pot . Prepare 500 ml boiling water and set aside for the meantime.
10. 45 minutes later, your dough must be rested well and ready to bake ! Lift parchment paper and transfer dough into a preheated pot or dutch oven. Cover. Put inside oven and pour boiling water to an extra tray or pot at the bottom part to release some steam that will help the bread to come out nice and crispy on the outside. Bake with pot cover for 20 mins at 230’c.
11. After 20 minutes, remove pot cover,reduce heat to 180’c and continue bake for 10 minutes.
12. 10 minutes later, remove bread from the pot or dutch oven and also remove the baking paper and continue baking your bread for another 10 minutes or so until nice golden brown color on the outside.
13. 10 minutes later or so , remove bread from the oven. Place in a cooling track. Slice before serving!
