This Healthy Chicken Tortilla Soup is so easy to make with rotisserie chicken. The entire dish can be made in only 10 minutes! My Chicken Tortilla Soup recipe is also only 339 calories for a serving of 2 cups ( a hearty bowl), has 27g of protein, 11g of fiber, and is low in fat.

I make this soup all the time for my meal prepping. It freezes incredibly well and can last for 3 months in the freezer. Every time I make this, I put at least 2 servings in a freezer-friendly container, label them and store them in the freezer. I keep plenty of options on rotation so I never get bored and always have something tasty to enjoy for lunch. Just take a container out the day before and enjoy the next day!

This recipe also uses only a few ingredients. You’ll need:
– shredded chicken ( I use rotisserie I had leftover)
– chicken broth
– canned diced tomatoes, canned black beans, canned corn
– fresh diced sweet onions, red peppers and you can also add fresh garlic

The toppings are what make chicken tortilla soup extra special! My favorite toppings for chicken tortilla soup are:
– Cotija Cheese
– Avocado
– A wedge of fresh lime
– Fresh cilantro
– Tortilla Strips

Instructions:
0:59 add spray of Olive Oil
1:04 add diced onions & red peppers saute for 2-3 minutes
1:19 add fire roasted tomatoes, black beans, & corn
1:46 add shredded chicken
1:50 add chilli powder & Salt (I like pink Himalayan), stir everything together well
2:05 add chicken broth, bring to a simmer for 2-3 minutes and serve when hot
2:28 add your favorite toppings & enjoy!
