A tasty and healthy Indian breakfast with red rice poha or aval. Red rice is considered healthier than white as it is relatively less polished. Poha is gluten free and light on stomach.

1 cup = 250 mL
Standard measuring spoons used

Ingredients
3 cups poha
1 onion
2 inch piece ginger
3 to 4 green chillies
1 to 2 potatoes
Few curry leaves
½ tsp Mustard seeds
½ tsp jeera
½ tsp turmeric powder
1 tsp sugar(brown)
½ to 1 tsp pepper powder
1 to 2 tbs lemon juice
Chopped coriander leaves
¼ cup coriander leaves
Salt to taste (pink Himalayan salt)
2 to 3 tbs oil (cold pressed Sesame oil used in recipe)
Water 2 to 3 tbs (optional)
Red rice poha can be replaced with white rice poha.
