Healthy Sharp Spinach!

Serves – 2-3
Ingredients:
Sharp Spinach – 1 large cup
Garlic – 5 pods, chopped
Urad Daal – 1/2 tsp
Chana Daal – 1/2 tsp
Dry Red Chilli – 2, cut into rough pieces
Onion – 1 small cup, cut into cubes
Chutney Powder – 2 tsp (optional)
Mustard – 1/2 tsp
Cumin – 1/2 tsp
Oil – 2-3 tsp
Turmeric – 1/2 tsp
Fresh coconut grated – 2 tbsp
Salt as per taste
Preparation:
Heat oil in a frying pan
Add Cumin and Mustard seeds, allow the mustard to splutter
Add Garlic, saute for a few seconds
Add dry red chilli
Add Chana and Urad daal, saute until golden brown
Add onions and fry until translucent
Add salt
Add turmeric
Add Sharp Spinach
Cook until Spinach is fully done
Add Chutney powder to make it tastier
Mix well and cook for 2 more minutes on low heat
Garnish with freshly grated coconut
