Caesar Salad Recipe:
2 small romaine lettuces, teared into pieces

Croutons:
2 slices of bread, cubed and toasted

Roasted soya strips:
160 g soya strips, cooked
2 – 3 Tbsp soy sauce (low salt)
1,5 – 2 Tbsp corn starch
1 – 2 Tbsp oil for frying

Dressing:
2 Tbsp almond flour
3 tsp nutritional yeast
3 Tbsp juice of lemon
1 – 2 Tbsp soy sauce (low salt)
1 – 2 cloves of garlic, minced (I used 1 clove)
1 Tbsp mustard (dijon)
(I used 3 Tbsp of homemade canned zucchini mustard.

1 – 2 Tbsp water (by water regulate the needed consistency)

BBQ CHICKPEA SALAD:

2 cans chickpeas (15 oz.), drained and rinsed (cca 500 g)

Homemade BBQ sauce:
3/4 cup ketchup (I used my homemade)
2 Tbsp juice of lemon
2 Tbsp soy sauce
1/2 – 1 tsp smoked paprika (not spicy)
1/2 – 1 tsp garlic powder
1 Tbsp oil
1/3 cup water?

Vegetable mixture:
2 small romaine lettuces, teared into pieces
1/2 avocado, cubed
1/2 red onion, diced
1/2 cup defrosted corn
1/2 cup carrots, peeled and grated
3 – 4 Tbsp green onions, chopped

Dressing:
2 – 3 Tbsp yogurt (vegan)
1/4 tsp salt
1/4 tsp garlic powder
1 tsp honey (any syrup you like)
1 – 2 Tbsp juice of lemon

For garnish:
fresh parsley
chives, chopped

Healthy Protein Salad:

1 can (15 oz.) chickpeas, drained and rinsed
1 cup peanuts, unsalted
1/2 tsp paprika
1/2 tsp salt (or to taste)
1 Tbsp olive oil
1 medium cucumber
4 medium tomatoes
1 medium red onion, sliced
1 bunch of salad leaves

Dressing:
3 Tbsp olive oil
1 Tbsp sesame seeds
1 Tbsp lemon juice
salt to taste
