Egg salad
Egg Salad ingredients
– 8 eggs, 1/3 cup of light mayo, 1 tbsp Dijon mustard, 2 tbsp finely chopped chives, 1 tbsp chopped green onion, Salt, pepper, garlic powder
Hard boil 8 eggs, let cool completely and peel.
Finely chop eggs to preferred size.
In a separate bowl mix mayo, dijon mustard, chives, green onion, salt, pepper, garlic powder and lemon juice.
Mix eggs into the spread completely.
Plate with sides of choice. I used cucumber and crackers. You can also make a sandwich as well!

Turkey Pasta
1 lb ground turkey, 1 can Rao’s pasta sauce (roasted garlic), 1 box of Rozoni’s veggie pasta, 1/2 onion, 1 tbsp garlic, 3 cups spinach, 1 lb asparagus, seasoning of choice, 2 tbsp olive oil.
Preheat oven to 350 degrees.
Bring water to a boil in a sauce pan.
Start by chopping onion. In a pot at medium temp, sauté onions until translucent. Add garlic and continue to stir to avoid burning.
Add ground turkey and continue breaking down turkey to desired consistency.
Add spinach and allow spinach to cook before adding Rao’s pasta sauce.
Add veggie pasta to boiling water. Let cook for 5 minutes before draining.
Clean and cut asparagus to bite sized pieces.
Place asparagus in oven for 5-10 minutes.
Plate 1 cup of pasta, 1/2 cup of sauce and asparagus.
