Ingredients:
3 cups @barilla Campenelle pasta
1 cup cucumbers
2 cups halved cherry tomatoes
2 cups Spinach
2 tbsp pine nuts
1 ½ cups chickpeas, drained and rinsed
Dressing:
¼ cup extra-virgin olive oil
Juice of 1 lemon
3 garlic cloves
¾ teaspoons salt
Instructions:
1. Bring a large pot of salted water to a boil. Prepare the pasta according to the package directions.
2. Drain the pasta. Transfer to a large bowl with the cucumbers, tomatoes, spinach, chickpeas, pine nuts.
3. Make the dressing and toss to coat. Season to taste with more lemon or salt.
