A yummy and simple whole grain and gluten free hot cross bun for one! This is based on the viral two-ingredient “magic dough.” You can use vegan yogurt and a non-dairy milk wash prior to baking to make this vegan!
Ingredients:
2 T boiling water
2 chopped dates
1 t orange zest
1 T vanilla protein powder (I used whey, can sub with 1 T sugar or maple syrup)
1/4 t cinnamon
1/8 t nutmeg
1/8 t salt
1/4 c gf flour ( I used buckwheat in this video, but gf all purpose gives a more traditional flavor profile)
2 T yogurt (I used plain nonfat greek, feel free to sub any kind of thick yogurt)
1 t psyllium husks (or 1/2 t psyllium powder or 1/2 T flaxseed meal)
