Sweet Corn Salad is a very healthy recipe and can be used as a side dish for lunch and dinner.

Ingredients:
Sweet corn boiled 200 grams
Cucumber finely chopped 1/3 cup
Broccoli 1/3 cup
Cabbage finely chopped 1/3 cup
Tomato finely chopped 1/3 cup
Capsicum finely chopped 1/3 cup
Radish finely chopped 1/3 cup
Carrot finely chopped 1/3 cup
Freshly coriander leaves chopped 1 tbsp.
Green olives 4-5
Lemon juice 1

Dressing:
Olive oil 2 tbsp.
Vinegar 1 tbsp.
Black pepper powder 1/2 tsp
Salt ¼ tsp or to taste

Directions:
Take 2 cups of water and boiled corn for 3-4 minutes till it becomes tender.
Now strain the excess water and keep the corns to cool down for some time.
In a bowl add all the finely chopped veggies (Cabbage, Tomato, Radish, Carrot, Broccoli, Capsicum Cucumber and Coriander leaves) and set aside.
In another bowl add (Olive oil, Vinegar, Black pepper powder and Salt) and set aside.
Now add boiled sweet corn and Lemon juice into vegies.
Add olive oil mixture and mix all the ingredients until well combined.
Serve sweet corn salad immediately or you can keep it in a fridge and serve it later.
