Bell Pepper Sammie Recipes:
With Meat Version (Option 1)
Cut in half and core a fresh bell pepper. Be sure to remove all of the seeds.
Add mustard and/or mayo to the inside of both halves.
Next, add turkey (or deli meat of your choice) to both halves. Press gently.
Add a slice of Colby cheese to both sides. Press gently.
Add sliced cucumber, tomato, and lettuce as desired.
Salt and pepper to taste.
Close and cut again as you would a sandwich. Serve immediately. YUM!
Vegetarian Version (Option 2)
Cut in half and core a fresh bell pepper. Be sure to remove all of the seeds.
Add mustard and/or mayo to the inside of both halves if desired.
Next, add macaroni salad to both sides. Press gently.
Add sliced cucumber, tomato, and lettuce as desired.
Salt and pepper to taste.
Close and cut again as you would a sandwich. Serve immediately. YUM!
