It’s food week again!! I have some great healthy meal ideas for you that center around eating the rainbow! I keep thinks pretty simple, but try to have a variety of color in my meals. So come along while I give you some ideas for some easy family dinners, meal-prep ideas and ways to bring in more plants into your diet!!

LET’S GO!!

Pesto Pasta (this is the closest thing I could find to what I did):

BBQ Tofu (Chicken Skewer) Salad:

Air Fryer BBQ Tofu (there are some other great marinades in this too!):

Small Batch Dressings:
Lemon:
2 Tbs. Fresh Lemon Juice
1/4 C. Apple Cider Vinegar
1/4 c. Extra Virgin Olive Oil
1 Tbs. Honey
1/2 tsp. Salt
1/4 tsp. Pepper
Directions:
Combine all ingredients, shake.

Balsamic Dijon:
2 Tbs Extra Virgin Olive Oil
1/3 c. Balsamic Vinegar
1 clove Garlic, minced
1 tsp. Honey
1 tsp. Dijon
Salt and Pepper to taste.
Directions:
Combine all ingredients, shake.

Cilantro Lime Ranch Dressing:
3 Tbs. Greek Yogurt
1 tsp. Mayonnaise
1 Tbs. Fresh Lime Juice
2 Tbs. Milk (dealers choice)
1 clove Garlic, minced
1 tsp. Jalapeno, minced
1 Tbs. Fresh Cilantro, minced
1.2 Tbs. Ranch Seasoning
Directions:
Combine ingredients, pulse in blender or with immersion blender.
