Today I am going to share kids lunch box recipe- sprouted moong muffins
Iron and protein rich recipe for kids
Ingredients-
Sprouts- 1/3 cup
Semolina-1/2 cup
Yogurt- 1/4 cup
Spinach-1 cup
Sugar-1 tsp
Salt-to taste
Ginger-1/2 inch
Garlic-3 cloves
Chilies-2
Sesame seeds
Eno-3/4 tsp or 1/4 tsp baking soda
Lime juice-1/2
Water-1/3 cup + 2 tsp
Garam masala-1/4 tsp
For tadka- oil-1 tbsp
Mustard seeds-1 tsp
Curry leaves
Method- first preheat the oven at 450 F , or if you are making it in a steamer then let water boil. Now in one mixer jar – add sprouts, semolina, yogurt, spinach, ginger, garlic , chili,salt, sugar, and water – blend well – keep it on aside for 10 minutes
Tadka- take oil in a pan make it hot and add mustard seeds and curry leaves
Add tadka in a batter – here in this batter you can add all spices of your kid’s choice for an example if they eat spicy , add more chili if they eat sweet – add more sugar .. and all
Now add eno , lime juice , and Garam masala-water and mix well
Fill all mold and sprinkle sesame seeds on top and put them in the oven , after 15 minutes check it out if it done then enjoy or you can broil them for crispy top.
