Tangy Tuna Soup with carrots, potatoes, bell peppers and coriander. Delicious, homemade, nutritious meal. Quick, flavourful and easy to make.

Ingredients:
– 1 & 1/3 cups of oats
– 7 cups of water
– 1 lime or lemon
– 1 large carrot
– 2 large garlic cloves
– 1 tbsp of coconut oil
– 1 tsp of ground cumin and coriander
– 1 vegetable stock
– 1 & 1/2 tbsp of all purpose seasoning
– 1/2 tsp of ground black pepper
– 1/4 tsp of crushed red pepper
– 4 small potatoes
– 2 tins of tuna (145g each)
– 1/2 of two different coloured bell peppers
– Fresh coriander
