Salad’s don’t have to suck! Today I am showing you how to make a quick and easy Black Bean Salad and a creamy and delicious Chipotle Salad Dressing! This recipe takes ten minutes to prepare and won’t leave you hungry after eating it!
Creamy Chipotle Lime Southwest Salad
SALAD BASE
-Spring mix
-Diced tomatoes
-Chopped red onions
-Seasoned black beans
-Cooked qunioa
-Cooked corn
-Cilantro
-Chopped green onions
CHIPOTLE LIME SALAD DRESSING
– 1 1/2 tbsp vegan mayo
– 1 tbsp Chipotle peppers in adobe sauce (use less if you don’t want it to be too spicy, or more if you want it extra spicy)
– Juice from one small lime
– 1 tbsp chopped cilantro
– tsp salt, pepper, garlic powder
– 1/4 c water (use less if you want the dressing thicker)
1. Blend all ingredients together in blender and serve over salad
