Lets begin with this super easy protein and nutrient packed Immunity booster Egg Salad recipe :
Ingredients :
Salad:
-1 cucumber
-1 tomato
-1 capsicum( red/yellow/green)
-3 hard boiled eggs

Dressing :
-1 cup coriander leaves( dhania).
-15-20 roasted peanuts.
-3 cloves garlic
-juice of Half lemon
-1-2 green chilies
-1/2 tsp sugar
– 1 tsp fish sauce
-1/4th tsp salt ( or to taste)

Method :
– Boil the eggs and cut all the vegetables and add the to a mixing bowl.
-To a grinder jar add all the dressing ingredients and make it into a fine paste.
-Now add the dressing to your salad bowl and give it a good mix.
-Your super easy and delicious egg salad is ready to serve.

Bonus tip: Any leftover salad can also be used as a sandwich filling 🙂
