Hey what’s up everyone welcome back to another video I’m Derek from simite nutrition and in today’s video I’m going to take you along for a week’s worth of my meals and a little bit of my life to show you what it looks like to be a

Vegan who likes to be fit healthy cook and most importantly eat delicious plant-based Foods so with this video I just want to show that you can eat a healthy vegan diet and that it certainly isn’t boring it doesn’t have to be complicated and we can enjoy the foods that we all grew up

Eating that we know and love so hopefully it gives you some ideas got lots to cover in this video because I have a busy week ahead of me lots of food to show you so let’s get right into it I start every day with some warm

Lemon water I’m not going to show this every day because it’s going to get repetitive but just know that I do this in the morning about a liter of warm water and a quarter of a lemon so on this day I was actually taking the day

Off from the gym so I just got into some food right away some peanut butter banana hemp seeds and cinnamon on toast so I just enjoyed a coffee while I ate this and edited a video all right so I’ve been sitting for too long today just had to get out here

Go for a quick run get moving even on my rest days I try and get in some physical activity even if it’s just a light jog like today I’ll probably be out here for 35 40 minutes or so just because I don’t know I don’t

Want to just be sedentary like all day I think it’s good to get up and move and if I stay at home I kind of just sit around a lot oh my gosh there’s ice but for me it’s really not that taxing on my

Body just to go for a short run so I still consider it a rest day I guess just an active rest day man it’s beautiful in here so I just finished the run and I have a few errands to do in town so I brought a couple snacks so I don’t get

Too hungry it’s just these tamari almonds and a mandarin orange I know it seems like a strange combination but these two together is insane like I can’t even tell you how good it is once I got home it was pretty much dinner time so this is what I made myself and

Here’s how I made it so I started by sautéing some onions threw in some cubed Tempe added some of this Japanese barbecue sauce to it and this stuff’s pretty strong so I also like to add a little bit of water as well and then I just let it simmer away and kind of

Condense down the Tempe absorbs all those delicious flavors then I’ve got some leftover pasta added some frozen veggies to it and then some fresh veggies on the top and here’s the final result I also had some leftover tahini dressing in the fridge I added that and

A balsamic reduction look at that so I just enjoyed that finished editing my video and then I decided I was still a bit hungry so I made myself a nice smoothie Bowl really quick and simple one just some frozen banana frozen blueberries a bit of protein powder some

Creatine and then Blended that up with some water added a little bit of granola on top and look at that it’s like a healthy protein Rich ice cream and then at the end of every day I take two of these veg essential multivitamins so this covers you for all the essentials

Some Sprouts so today was an upload day so I uploaded my video and I was just kind of tending to the comments making sure everything was cool there and then partway through the day I had myself a snack one of my favorites just some sliced apple and some peanut butter and

Then I did some wrist exercises cuz well these are more like forearm and elbow exercises cuz I’ve had some um tendon issues my elbows lately and this is supposed to help then out for a quick run so like I said before my day off try and get out there get some exercise

Don’t want to be stagnant all day so it came to the river and the river is unbelievably high right now it it’s just crazy it usually looks nothing like this in the summer today was a special day because we’re actually celebrating Crystal’s mom’s birthday so I went out

And got some takeaway at a local restaurant upon her request and brought it back to their place and I’ll ate that together so here I have a tofu hot pan and then also a yellow curry so this was unbelievable it’s one of our favorite restaurants to get some vegan food at

They have some really good options and I enjoyed that with the family and then it was time for the cake Crystal made this unbelievable chocolate ganache cake and it uses like firm silk and tofu melted chocolate chips and then she’s got some peanut butter and a nut and date

Crust Sunday so I’m well rested full of cake and it is time to work out so I’m having some of this veg Pre-Workout in their new Fuji apple and pear flavor the stuff is so unbelievably tasty and it’s a great pre-workout as well gives you lots of energy good focus without any

Crash as well which is really nice so I just hammered some of that on the way to the gym and then hit the workout All right so I just got back from my workout and I’m having one of my favorite post-workout meals especially to have on a nice relaxing Sunday like today a big tofu scramble so what I have in here is pretty much just everything that you see on the screen here just

Some vegetables and then in the crumbled tofu just some spices I’ve made this a whole bunch on my channel so you guys know this one by now I cooked all that up and I’m having it with some toast some micro greens salsa and some avocado so it’s a bit later in the day

Today probably going to be just a two meal day but that’s all right that’s often how I do it so uh yeah you can eat this and I’ll probably see you guys at dinner let you know what I have there so in between my two meals I got working on

One of my hobbies so I have so many little like random hobbies and I don’t show them a lot on this channel but I just love tinkering on things working on stuff anything like motorized electric I just love love it all for dinner I just baked some sweet potatoes in the oven

This is the best way to do it slice them in half cook them face down and then I also have a little sauté going just some of this field roast smoked apple and Sage Satan sausage really high in protein really delicious and then some onions so sauteed that up together and

Then put that into a bowl with the sweet potato and a salad and then on top I’ve just got some of this really nice porable tahini and then some kale and oregano pesto going on there as well and some of this nonia balsamic glaze on the sweet potatoes this is a really nice

Combination and look at that one delicious looking meal I’m going to be hitting the gym first thing again today so after I get through some of my lemon water I’m actually adding some beetroot crystals to the water today and this is an amazing pre-workout it’s really good for

Helping with blood flow and endurance and just makes you feel awesome you do want to have it about an hour and a half or or so before you work out to get the most benefits Though all right so I just got back to my workout and today for my post-workout meal I think I’m just going to have a nice big bowl of oatmeal so how I usually make this is just cook the oats in water I add some chopped dates for sweetness then some chopped apple and

Some cinnamon once that’s cooked I just fire it into a bowl with some organic pumpkin seeds some peanut butter some hemp hearts and then I like to make this like protein and creatine milk for it and that’s just some water in a blender with a banana a scoop of protein powder and some Creatine wow that is so good it’s like naturally sweetened apple cinnamon oats that date hack is the best if you haven’t been making your oats with chopped dates to kind of like naturally sweeten it so you don’t have to use any maple syrup or sugar or anything you got

To try it so I definitely have extra like protein milk that I made and I’m just going to put it into a cup and then have it alongside with the oats I’m going to enjoy this I got a bunch of work to do and then I think I’ll

Probably see you guys at the next meal I guess that’s what we’re doing with this Video all right so I’m cooking some dinner and as you can see I’ve got some tofu sauté so how I made this is just chopped up some onions started those sauté and then added some cubed tofu and then this Japanese barbecue sauce and then I also like to add some water just

To kind of water it down and then I just like to simmer this for a good while to let all the flavors get into the tofu and I’m also steaming some frozen broccoli and then I have some rice on the go as well and there it is so I’m just having it

All with some fresh veggies avocado some sauerkraut and then some everything bagel seasoning on top of the broccoli man that is one beautiful looking bowl so can’t wait to dig into this just a two meal day today for me and that’s often how it is just like uh

You know a fast in the morning workout big breakfast sometimes I’ll have a snack or two in the middle of the day and then a big dinner so I’m going to sit down and enjoy this if I don’t need anything else I’ll probably see you guys

Tomorrow if I do I’ll show you that I don’t know I’ve been eyeing up that uh cake that Crystal made for her mom’s birthday there’s still a piece left so maybe I’ll have a little bit of that later see how full I am after this Yes Today is leg day so after my lemon water I’m actually making some coffee and then I’m just going to hang out here with Paulie and answer some of my social media comments and DMS and that sort of stuff just catch up on things and then

Finish my coffee on the way to the gym and hit those Legs All right so for today’s post leg Day meal I’m having some rice and bean tacos man these look incredible oh yeah all right really quickly here’s how I made these so I started by sautéing some bell pepper onion Tomatoes some black beans along with these spices here that you see on

The screen and then just added a little bit of water and mixed everything around and I’m just cooking up some corn tortillas at the same time added some of that leftover white rice from the other night and then filled up the tacos add a little de of cheese some cilantro some avocado

Salsa then I made a little bit of salad and had some of the leftover rice and bean mix with it made a nice tahini dressing all the ingredients there were on the screen and added some fresh onion and there we Go this is the best I can’t wait to get it into this so hope you guys enjoyed this recipe see you at the next meal for dinner I’m making this delicious instant pot coconut curry so I started by sautéing some veggies in the instant pot and then mix together a whole bunch of

Different curry spices and Seasonings some stuff I had to use up in the cupboard and then added that to the sauté just kind of get those flavors going and then chopped up some sweet potato extra firm tofu rins some yellow split peas and got myself a can of

Coconut milk added all that to the instant pot added a little bit of extra water mix it around and then set it to cook for about 12 minutes and man this made the most delicious Curry added some frozen green peas just at the end let those thaw had

It with some leftover white rice tomatoes and some spinach this was unbelievable all right let’s go starting the day with another workout just getting some of that veg pre-workout into me hammering that in the car and I’m ready to go today’s post-workout meal is just going to be some of that leftover coconut

Curry bit of white rice and I’m just sautéing some spinach with a bit of that Japanese barbecue sauce having all that in a bowl with some chopped cucumber a bit of sauerkraut bit of that kale pesto on the cucumber and then I also sauteed one of those field roast apple and Sage

Sausages this was a really quick meal to throw together but oh so delicious all right so for dinner tonight I’m going to be having one of these sort of like frozen noodle things if you guys watched my Costco haul video you saw me get these from there and while they are

Super tasty and it looks like they have a lot of veggies on them they don’t really it’s just like one thin layer of veggies and lots of noodles so I’m going to add a whole bunch of stuff to this to make it healthier tastier and also some

More protein first I’m going to chop up and sauté this soyf free tofu so this is actually made from fava beans 52 g of protein in one package but I’m probably just going to eat about like 2/3 of the package I don’t need that much protein and again add a little this Japanese

Barbecue sauce my favorite flavoring for tofu these days some frozen broccoli some frozen organic mixed vegetables the frozen noodles and then once that’s all thawed and cooked pretty well then I’m just going to add some chopped purple cabbage and these broccoli Sprouts that I’ve been growing for the last few days are

Finally ready look how good and fresh those look man it was so cheap too to grow this many Sprouts it’s the best so I’m going to have a whole heap of these with it all right so there it is that’s how I change a frozen Puck of noodles

Into a pretty healthy and delicious dinner so another late night snack here just having some of this Prana granola with some chopped banana some fresh raspberries and then a bit of unsweetened soy milk and then I forgot to have my creatine today so adding that to this as

Well all right so it’s the last day and I have a really fun day planned but I got to get out of the house so I’m making myself a quick smoothie first a couple bananas a date flax seeds some greens got some cilantro and some broccoli Sprouts in there some protein

Powder some creatine a little bit of spinach and some water and I’m just blending that up a quick little stretch while it’s blending and then I realized I didn’t put anything cold in there and I don’t really like warm smoothies so I threw in half of a frozen banana Blended

That up and we are on the road so today should be a pretty fun day I’m actually meeting up with my friend Mike and one of his friends and we’re going to take their side by sides off-roading up into the back country and actually like check out this cabin that

Somebody’s built that’s like you know way up the mountain so uh it should be a pretty fun adventure I brought a bunch of snacks and food and stuff like that to have along the way so uh yeah pretty still it’s going to be a fun day take you guys Along so we made it here’s the cabin and it was definitely an adventure getting up here but wow it was worth it this is such a cool place it’s completely off grid there’s a little place where you can like plug in a generator so you can

Power It Up get some lights going get the stove going if you want there’s like a wood burning stove in there as well so I’ll just take you inside here really quickly and just show you this place because it is so cool I just can’t imagine the time and effort it took to

Bring all the materials up here to build this place on the top of this mountain out in the middle of nowhere so you know I had to bring some snacks along trail mix is always a go-to of mine and then I also made a couple of these peanut

Butter and banana sandwiches to have while we were up there and that was definitely a good move they were Delicious all right so last meal of the full week’s worth of eating I better make it a good one especially after like a long day out in the bush like that so I think I’m going to have some tortilla pizzas it’s one of my favorite meals to

Have so let’s go making them so nothing too crazy here just a bit of tomato sauce on the tortillas some of that kale and oregano pesto on there as well and then just chopped up a whole bunch of veggies to have with it bit of smoked

Tofu added that some DEA cheese bit of tomato on top and look at that they turned out so amazing if you’ve never tried making tortilla pizzas I highly recommend it it is so easy and so delicious so I just plated that up with a nice salad some pourable tahini on Top

This delicious balsamic reduction some hemp seeds there we have It that’s such good pizza way better than any like vegan frozen pizza that you’re going to get in stores here’s something I always love to do when I have pizza is put a whole bunch of fresh Sprouts on it I know it seems kind of like a weird combination like I might be
