Healthy Dinner Idea – Low Carb Fried Rice, Turkey Meatball with Mac & Cheese

Hey guys. I have very easy dinner idea for you guys!
Since i am trying to loose couple more pounds and at the same time having picky eaters, sometimes our dinner is hectic. I always run out of recipe.
But this recipe has been our fave and been eating them at least twice a week. Hope you enjoy the recipe.

Cauliflower Fried Rice:
Serving: 2-3
Ingredients:
1. Ground Turkey (93% lean 7%) – 1/2lbs
2. Red Potato – 2 medium size
3. Carrots – 5 baby carrots
4. Onion – ½
5. Garlic – 2 gloves
6. Egg – 2
7. Cauliflower – half a bag of pearled cauliflower
8. Soy sauce – 1 tbsp
9. Oyster sauce – 1 tbsp
10. Green onion – ½ cup
11. Peas – ½ cup frozen peas

Kid’s recipe:
Serving: 3-4
Mac & Cheese:
Ingredients:
1. Pasta – 1/4lbs (or any shape of pasta you like), cooked according to package directions and drained
2. Unsalted Butter – 1tbsp
3. Flour – 1tbsp
4. Salt and Pepper to taste
5. Whole Milk – ½ cup
6. Extra Sharp Cheddar, grated – ¼ cup
7. Mozzarella, grated – ¼ cup
8. Parmigiana – ¼ cup

Turkey meatball:
1. Ground Turkey (93% lean 7%) – 1/2lbs
2. Parmigiana – ¼ cup
3. Onion – ½
4. Garlic – 2 gloves
5. Salt and pepper to taste
