►INGREDIENTS:
3 large eggs
1/2 cup maple syrup or honey
1/3 cup Greek yogurt, 2% fat or higher
2 tsp pure vanilla extract
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Orange or lemon zest, optional
3 1/3 cups + 1 tbsp almond flour
1 cup blueberries, fresh or frozen
Cooking spray

►DIRECTIONS:
1. Preheat oven to 350 degrees F. Line 12 muffin tin with parchment paper muffin liners (highly recommended) and spray with cooking spray. Set aside.
2. In a large bowl, add eggs, maple syrup, yogurt, vanilla extract, baking powder, baking soda and salt. Whisk very well until combined and no lumps.
3. Add almond flour (make sure to level the top with a knife and do not pack) and stir gently with spatula until well mixed.
4. In a small bowl, combine blueberries with 1 tbsp of almond flour and stir to coat evenly (this prevents them from sinking).
5. Add blueberries to the bowl with batter and give a few gentle stirs just enough to combine.
6. Using an ice cream scoop, divide batter between 12 openings of previously prepared muffin tin. Bake for 20 minutes on the middle rack or until toothpick inserted in the center comes out clean.
7. Remove from the oven, let cool for 15 minutes and enjoy.

today i’m super excited to share with you my almond flour blueberry muffins recipe they’re gluten free super moist fluffy easy to make and are loaded with fresh or frozen blueberries let’s do it preheat the oven to 350 degrees fahrenheit and position the rack in the middle because you don’t want to burn your almond flour muffins now grab the bowl and crack three eggs almond flour baking requires a lot of eggs just like coconut flour just because this flour does not contain gluten think about it it just basically ground up almonds now we’re going to add maple syrup you can also use honey or any sugar-free liquid sweetener spray your measuring cup with cooking spray then it will slide out super easily i’m using two percent greek yogurt to moisten the muffins you can also use plain yogurt you can use apple sauce you can use mashed banana this really helps to reduce the oil in baking with almond flour and flour is basically almonds so there’s already a lot of fat so it’s good to cut back on that we’re adding generous amount of vanilla two teaspoons because it goes really well with blueberries and then we’re using baking powder baking soda and salt just all the usual suspects now this recipe is easy one bowl so make sure to whisk all ingredients really well and i kind of like go with the whisk into the egg yolk and break it first and then it’s very easy to combine all we have left to do is add almond flour i’m using super fine grind almond flour this is my favorite brand because you do get a decent deal on it at costco so just three cups and i just kind of scoop it from the bag and level the top i have tried to use the traditional method of measuring flour it doesn’t really matter so you can scoop it with a spoon into the measuring cup or just grab with it now this flour also is not actual flour so you don’t have to worry about over mixing gluten will not develop so just make sure to really incorporate the flour well into the muffin batter and it’s kind of like will thicken a little bit as you mix it should be like this thicker consistency now we’re going to take your blueberries they can be fresh or frozen if you’re using frozen blueberries there is no need to thaw them add them to a bowl and sprinkle with almond flour then grab a spoon and give it a stir this step prevents from sinking blueberries into the muffins you know like those muffins at the bottom with a lot of berries nothing on top when i want that we want blueberries poking on top and bleeding a little bit and creating those beautiful blue purple waterfalls that’s what we want now incorporate them into the muffin batter that’s ready now our muffin tin i’m using regular 12 muffin tin and i’m using cupcake liners with almond flour i do recommend to spray even if your liners are kind of like parchment paper some of them are sticky some of them are not almond flour sticks my favorite way to measure out the muffin batter is using the trigger ice cream scoop because look it creates the even portion even size muffins and then whatever i have left in a bowl i just kind of distribute evenly it would be nice to add some extra blueberries this is optional on top just like for more appeal kids love these muffins so we have to sell these to the kids now we’re going to bake them on the middle rack for 20 minutes only they they do cook fast and almond flour tends to burn fast look they browned and that’s on the middle rack so i highly highly highly stress don’t forget to move the rack to the middle and your regular toothpick test your muffins are ready when it is inserted in the middle and comes out clean look at these beauties they are so beautiful and i have to say they’re super moist and nutty and sweet my kids don’t love all the baked goods with almond flour because they can taste it but they absolutely love this taste test delicious i hope you guys enjoy and if you did share this recipe with your friends and follow see ya
