Learn how to prepare a quick lunch box beetroot pulao.

This beetroot pulao with coconut milk has a mild soothing taste. So this recipe is just perfect to include beetroots to make your lunch healthy as well as tasty. Kids will love this rice for its interesting colour.

This beetroot pulao goes very well with a quick egg or a simple raita.

Ingredients

1 cup chopped beetroot

1/3 cup each sweet corn, peas and chopped carrot
Few chopped onions
1 ts each grated ginger and garlic
4 green chillies
Few mint leaves
Whole spices – 2 bay leaf, 2 cardamom, 3 cloves. 1 small cinnamon stick, 1 star anise
Spice powders – ¼ ts turmeric powder. 1 ts coriander powder, ¼ ts garam masala

2 cups thin coconut milk

1 cup basmtic rice soaked in water for 30 min
½ lime
2 tbsp oil / ghee
