What’s for Dinner last week you ask?! Here is our menu this week for easy weeknight meals:
Grilled Cheese with Chicken Soup, Spicy Potato Tacos with Black Beans, Chips & Queso, Chicken ala King with Dumplings and an Alfredo without heavy cream! So many yummies. I hope you enjoy my weeknight dinners.

Recipes:
Soup/Grilled Cheese – basic 🤪 I used Lipton mix and cooked according to directions.
Spicy Potato Tacos:
Spicy Ranch: Bottle Ranch mixed with Sriracha (more sriracha for more heat!)
Potatoes:
roughly 10 russet potatoes washed and diced
add to potatoes:
4 tbsp EVOO
3 tbsp paprika
3 tbsp chili powder
1 tbsp season salt
2 tsp onion powder
2 tsp garlic powder
Mix and bake at 350 for about 60 minutes or until potatoes are tender (depends on the size of the chopped pieces)… stir/flip halfway through.
Serve on flour tortilla with toppings of choice.
