Ingredients:
Black quinoa (cooked until soft) 🍚
Pomegranate seeds 🍇
Avocado 🥑
Watercress 🌿
Home-grown lettuce 🥬
Feta cheese 🧀
Tomato 🍅
Miso sauce (diluted with water) 🍶
Aubergine 🍆
Mixed seeds 🌾
Salt & pepper 🧂
Pomegranate molasses 🍯
Steps:
Prep the Aubergine: Remove the skin, add salt, and let it drain for 10 mins. Lightly fry or bake it.
Assemble the Salad: Arrange sliced avocado, lettuce, and prepared aubergine on a plate.
Add watercress, tomato, and black quinoa.
Sprinkle pomegranate seeds and crumble feta cheese over the top.
Season with salt & pepper.
Finish with a Glaze: Add a drizzle of miso sauce and pomegranate molasses.
