Non-Fried Medu Vada Recipe:

Ingredients:
1 cup Urad Dal
Water for soaking
1 Green Chilly finely chopped
1 inch Ginger finely chopped
5-6 Curry Leaves chopped
1 tbsp Coriander chopped
Pinch of hing
2 tbsp Rice Flour
Salt to taste
Oil for cooking

Method:
– Wash and soak urad dal in water for minimum 3 hours
– Drain out the water completely and grind into a thick and smooth paste in a high speed blender
– Transfer into a bowl and keep mixing for 4-5 minutes till the batter is light and fluffy
– Add in all the other ingredients and mix well
– Wet your hands and form small balls of the dough
– Grease the paniyaram pan with little oil and drop the balls in each cavity
– Cook on a low flame from both sides till gbc
– Enjoy with some sambhar or pack it to go
