Somethings were MADE to be leftovers, like lasagna and chili. Sitting in their own flavors for longer just makes them better! But, these are also things you basically warm up and eat exactly the same way as you did the first time.
Half the fun of leftovers is changing them… like you’re competing on an episode of Chopped! On this episode, I chat with my kiddo about using leftovers from the upcoming holiday to create new meals that are just as, if not more yummy. Starting with leftover chicken pesto sandwiches [email me for the recipe] and moving onto veggie + rice with fish on my meal plan for the week.
May your leftovers be plenty and delicious. Merry Christmas!
{You didn’t miss it. I still have samples of my shake mix to give away. Merry Christmas to your health! If you want one, send me your mailing address.}
Monday: Harvest baked eggs + acorn squash
Tuesday: Wings, cauliflower tots + roasted broccoli
Christmas potluck dishes: Baked veggies + chestnuts + feta / green salad / apple + cranberry crumble

Message me for details on any of these!
