Breakfast sandwich:
Ingredients:
1 vegan English muffin
Plant based sausage
3 tbs of chickpea flour
3 tbs spring water
1/4 tsp tumeric
Salt and pepper to taste
1 slice of Vegan cheese
Black Bean Quesadillas:
Ingredients:
2 Tbsp. extra-virgin olive oil (I used avocado oil)
¾ cup finely chopped red bell pepper
½ cup finely chopped red onion
1 Tbsp. adobo sauce (from a can of chipotle chiles in adobo)
2Â garlic cloves, minced
¾ tsp. chili powder
½ tsp. ground cumin
1 (15-oz.) can black beans, drained but not rinsed
¼ cup vegetable broth
2 Tbsp. finely chopped fresh cilantro (I used parsley)
1 Tbsp. fresh lime juice
½ tsp. kosher salt
Chao vegan shredded Mexican Blend cheese
2 whole wheat flour tortillas
Mushroom, Spinach & Cherry Tomato Pasta:
Ingredients:
1 8 oz pack of portobello mushrooms
2 Shallots, diced
1 12oz pack of cherry tomatoes
handful of spinach
1-2 tbs of avocado oil
1 tbs vega
1 tbs minced garlic
Himalayain Pink salt
1 tsp crushed red pepper
1 tsp Italian seasoning
8 oz penne chickpea pasta
(Save 1/4 cup of the pasta water)
