Ingredients:
– Pomegranate: one big
– Cucumber: one large
– Parsley: one cup chopped
– Mint: 1/4 cup chopped
– Vegan White Cheese: 1/4 cup chopped into small cubes
– Walnuts: 1/3 cup whole walnuts
– Lemon: 1/2 a lemon juiced
– Olive oil: 1/4 cup
– Salt & pepper
Instructions:
– Deseed the pomegranate.
– Chop the cucumber and walnut.
– Put the chopped veggies, pomegranate seeds, lemon juice, olive oil, salt, and pepper into a big salad bowl.
– Mix well to combine and serve the salad!
