INGREDIENTS

Cheesecake
•24oz low fat container cottage cheese
•3 eggs
•3/4 cup Legion coconut or vanilla whey protein powder (save 20% with code 2XW)
•1/8 cup stevia (or more if you want it sweeter)

Strawberry Rhubarb Compote
•1 cup diced strawberries
•3/4 cup diced rhubarb
•1/8 cup honey
•1 tbsp water
•1 tbsp stevia

Optional add on: 1-2 tbsp shredded coconut

DIRECTIONS

•Preheat oven to 350.
•Place your compote ingredients in a small saucepan. (I LOVE my non-toxic caraway pans and have a special code for my audience – 2EXPLOREWELLNESS10 )
•Let simmer, mixing frequently and mashing
•Once strawberries and rhubarb have gotten soft (about 10-12 minutes) and a sauce has formed, remove from heat and let cool
•Blend all cheesecake ingredients until smooth.
•Pour into a 9” breakaway cake pan lined with parchment paper.
•Bake for about 30-35 minutes, depending on your oven. It should only jiggle slightly when shaken.
•Let cool completely before storing in the fridge for at least 2-3 hours.
•Add some extra compote before eating and enjoy!
