Roast Chicken Marinade:
1 tablespoon tomato paste
6 cloves garlic cloves minced
2 teaspoon paprika
1 teaspoon cumin
1/4 teaspoon turmeric
2 teaspoon salt
1/4 teaspoon black pepper

Marinade for at least a few hours. Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

Parmesan Crusted Sweetpotatoes

1-2 large sweetpotatoes , sliced
2 tbsp olive oil
1 tablespoon seasoning of choice (I used EBTB seasoning)
1 garlic clove, grated
1/2 cup shredded parmesan cheese

Place sweetpotatoes cut-side down on top of the parmesan, bake for 30-40 minutes until sweetpotatoes are tender and the bottom layer of cheese is crispy and deeply browned.

Red lentil soup ingredients:

3 tbsp olive oil
1 large chopped onion
4 cloves minced garlic + 1/2 tsp salt
2 stalks celery, chopped
1 large carrot, chopped
1 cup red lentils
1/3 cup short grain rice
1/2 tsp cumin
1/4 tsp black pepper
1/4 tsp turmeric
10 cups broth (vegetable or chicken)
