VERMICELLI IDLI
Ingredients
1 cup thin vermicelli, roasted and broken
½ cup fine semolina
¾ cup yogurt
½ teaspoon baking soda
Salt to taste
Tempering
2 teaspoons oil
½ teaspoon mustard seeds
2-3 chopped green chillies
1 teaspoon roasted Bengal gram
1 teaspoon split skinless black gram (dhuli urad dal)
4-5 chopped curry leaves
A pinch of asafetida
Method
1. Mix together vermicelli, semolina, yogurt, ginger and salt in a bowl. Add baking soda and mix well. Rest the batter for fifteen to twenty minutes.
2. Heat oil in a non-stick pan, add mustard seeds, once they splutter, add, green chillies, roasted Bengal gram, split skinless black gram, curry leaves and switch off the flame. Pour the tempering over the batter and again rest it for five minutes.
3. Pour into greased idli moulds and steam for eight to ten minutes. Serve hot.
