This Indian style pumpkin soup is the perfect weight loss meal which is light, creamy, and full of Indian flavours. We’re using minimal oil, a mix of spices like cumin, pepper and ajwain for digestion, and a handful of nuts for a silky texture without adding cream.

It’s super easy to make, takes under 30 minutes and tastes like something you’d get at a fancy cafe. Great for dinner or a light lunch!

Ingredients:

1.5 cups pumpkin
½ tsp oil
2 bay leaves
1-inch cinnamon
½ tsp cumin seeds
½ tsp peppercorns
½ onion
½ inch ginger
⅛ tsp turmeric
¼ tsp ajwain
5-6 cashews
7-8 almonds
1 litre water or stock
¼ tsp salt
