Today’s recipe is a creamy, comforting bowl of Tomato & Broccoli Spaghetti — and here’s the twist: it’s made without any cream! It’s guilt-free, packed with flavour, and makes for a perfect weeknight dinner or weekend treat. A wholesome pasta dish you’ll want to make on repeat!

✨ Ingredients:
Spaghetti – 200 g

Large Tomatoes – 4

Garlic – 4 cloves, roughly chopped

Olive Oil – 5–6 tbs

Broccoli – 1 whole head (florets + finely chopped stalk)

Parmesan Cheese – 1/3 cup

Ground Black Pepper – to taste

Chilli Flakes – 1/2 tsp

Italian Seasoning – 1.5 tsp

Almonds – 8 to 10

Salt – to taste

Tomato Puree – 1 tbs

Basil Leaves – for garnish

🥄 Method:
Sauce:
In a pan, heat olive oil. Add garlic, chilli flakes, and Italian seasoning. Stir gently so the spices don’t burn. Add chopped tomatoes and salt. Add the Almonds. Cook till tomatoes are soft and mushy. Let cool. Blend with parmesan cheese into a creamy tomato sauce.

Veggies:
In the same pan, heat olive oil and add chopped broccoli (florets & stalk), tomato puree, salt, pepper, and a splash of pasta water. Cook covered for 4–5 mins till tender.

Combine:
Cook spaghetti in salted water. Drain, but save some pasta water. Pour the tomato sauce over the broccoli, mix well, and then add in the spaghetti. Toss everything together until each strand is beautifully coated.

Serve:
Garnish with fresh basil and a sprinkle of parmesan. Serve warm and enjoy!
