RECIPE (makes 2 servings)
– 2 small Sweet Potatoes / 1 Large
– 1 Red Onion
– 1 tin Chickpeas (drained & rinsed)
– 1/2 Cucumber
– 60g Feta
– 2 tbsp Pumpkin Seeds
– Rocket

for the dressing:
– 2-4 tbsp Harissa Paste
– 125g Greek Yoghurt
– Juice of 1 Lemon
– 1/2 tsp of Salt

1. Peel and chop sweet potatoes and red onion. Drizzle with some olive oil and roast @ 200°C / 180°C fan for 30-40 minutes flipping half way through.
2. Combine the dressing ingredients in a bowl. Start with 2 tbsp harissa and add more if you want.
3. Divide the dressing between 2 jars.
4. Divide chickpeas, feta, pumpkin seeds, roasted veg, cucumber and rocket between the jars.
5. Store in the fridge and flip onto a plate/bowl when you want to tuck in 😬
