Hello there and welcome back! Today’s video is a cute little 3 Day Food Diary, featuring lots and lots of EASY, SIMPLE and dare I say LAZY?? vegan meal ideas.
I’m still taking it slow and getting back into cooking with some quick and low effort, but not boring (!) recipes. Well, with one exception, and that would be a baking session for the BEST VEGAN CINNAMON ROLLS EVER. Sorry for yelling haha, but they’re SO good. Please try them!

⭐INGREDIENTS & NOTES
#1 Anko Berry Toast
2-3 pieces bread
1 handful strawberries
1 layer natural cashew butter (or peanut/almond/sun butter)
1 layer sweetened red bean paste
sesame seeds
→ serves 1
#2 Brown Sugar Vanilla Iced Coffee
1 tsp brown sugar
a few drops vanilla aroma (or ½ tsp vanilla extract)
2-3 shots of espresso (or up to preference!)
enough ice to fill your cup
barista oat milk (i tend to do like ⅓ cup = 80ml)
→ serves 1
#3 Green Goddess Bowl
1 handful cherry tomatoes
1 small head baby (romana) lettuce
½ can mixed beans, rinsed
1 small handful walnuts
for the dressing:
3-4 tbsp soft tofu (or medium firmness)
2 tbsp vegan sour cream
2 ½ tbsp fresh lemon juice
1 ½ tbsp olive oil
1 tsp agave syrup
2 handfuls fresh basil leaves
served with bread or another carb of choice
→ 1 serving , or 2 as a side
#4 Red Bean Oatmeal
½ cup plus 1 tbsp rolled oats (55g)
a generous pinch of salt
a few drops vanilla aroma or 1 tsp vanilla extract
1 cup (240ml) water
2 tbsp sweetened red bean paste, or to taste
1 handful strawberries
1 splash of oatmilk
sesame seeds for topping
→ 1 serving
#5 Cold Noodles 1.0 (Kongguksu 콩국수 Inspired)
2 servings thin korean noodles
1 handful ice cubes per bowl
for the sauce:
~ 4 tbsp soft tofu (or medium firmness)
1 tbsp natural cashew butter (or peanut, if you don’t mind a peanut flavour)
1 tsp roasted sesame oil
1 ½ tbsp white wine vinegar
2 tsp nutritional yeast
½ cup water (120ml) (if needed, add more)
⅓ tsp salt, or more to taste (or use soy sauce!)
topping ideas:
vegan kimchi, spring onion, pre-fried tofu, sesame
→ serves 2
#6 Cold Noodles 2.0 Spicy Version
Same as #5 BUT with an added gochujang sauce!
For the spicy sauce:
1 tbsp gochujang paste
1 tbsp soy sauce
1 tbsp agave or maple syrup
1 tbsp white wine vinegar
1 splash hot water
→ serves 2
#7 Banana Lassi Type Smoothie
2 ripe bananas
1 cup (240ml) thick soy yogurt
a few drops vanilla aroma (or ½ tsp vanilla extract)
~3 tbsp oats
1 tsp agave
⅓ cup water, or more (80ml)
1 handful ice cubes
→ serves 1
#8 Perfect Vegan Cinnamon Rolls (big batch)
125g vegan butter (4,4 oz)
6 tbsp sugar
3 tsp vanilla extract or lots of vanilla aroma drops (10-20)
625ml non dairy milk (room temp) (= 2 ½ cups)
2 ½ packets dry active yeast (17,5g = 0,62 oz)
1 kg flour (2.2 pounds) (plus more for kneading)
2 ½ tsp salt
2 ½ tsp cinnamon, for the dough
a few tsp vegetable oil for your hands (helps with kneading); plus for greasing the bowl
for the filling:
~6 tbsp vegan butter, divided between the two sheets
6-8 tbsp sugar plus ~3 tsp cinnamon, mixed, then divided between the two sheets
1 few more tbsp oat milk, for brushing the tops
→ yields 22-24 rolls
→ use up to greased 5 baking tins à 20-30 cm (can be any shape, just make sure to give each roll enough space to rise and bake)
→ bake in a preheated oven for 25-30 min or until golden brown at the top and baked through
