Dahi Green Beans

Ingredients:

Green beans: 500 gms
Curd: 100 gms
Turmeric powder: 1 tsp
Coriander powder: 1 tsp
Cumin powder: 1 tsp
Chilli powder: 1 tsp
Salt: to taste
Sugar: 1/2 tsp
Garlic: 6 cloves
Green chillis: 4
Refined oil: 3 tbsp
Garam masala: 1/2 tsp
Kasuri methi: 1 tbsp

Cooking process:

-Start by crushing the garlic and green chillis in a mortar and pestle. Keep it aside.
-Cut the tips off of the green beans and wash and keep aside.
-To a pan, add 1 tbsp oil and let it heat up. Once hot, add the green beans and fry until the beans are slightly charred and roasted. Take them off the heat and keep aside.
-For the gravy, mix 100 gms curd, 1 tsp each of turmeric, cumin, coriander and chilli powder, 1 tbsp salt and 1/2 tsp sugar. Whisk until smooth.
-To a pan, add 2 tbsp oil and add the curd mixture. Let it cook on high heat for 2 minutes until the oil starts to separate.
-Add the green beans and mix thoroughly.
-Cover and cook on low flame for 8-10 mins until the beans are cooked through.
-Add a pinch of garam masala and kasuri methi to finish off.
