Ragi & Coconut Bread Air Fryer Version

This one is from my old Tea-time Snack Series 🌸 I couldn’t continue that series regularly, but today I made one of those recipes — super simple and so good!

It’s a Ragi + Coconut + Wheat Flour Bread, soft, flavorful and perfect with evening chai ☕️. You can bake it in the air fryer, oven, or even in a cooker. In the cooker, just add salt or sand at the bottom, place a stand, put your cake tin on top, remove the gasket and whistle, and cook on low heat for about 45 minutes.

Ingredients (makes 1 small loaf):
• Ragi flour – ½ cup (about 60 g)
• Whole wheat flour – 1 cup (about 120 g)
• Baking powder – 1 ½ tsp
• Baking soda – ¼ tsp
• Salt – a pinch
• Cardamom powder – from 4–5 pods (about ½ tsp)
• Fresh grated coconut – 1 cup (about 80–100 g), divided (¾ cup in batter + ¼ cup for topping)
• Butter – 50 g (softened)
• Cooking cream – 100 ml (or you could do half cream + half milk for lighter texture)
• Coconut Sugar ½ to ¾ cup (depending on sweetness you want)

Method:
1. In a bowl, whisk together butter, sugar until creamy.
2. Add cream and mix well.
3. Stir in ragi flour, wheat flour, baking powder, baking soda, salt, cardamom.
4. Fold in ¾ cup grated coconut. Batter should be slightly thick but spoonable. If too dry, add 2 – 3 tbsp milk.
5. Pour into a greased air fryer-safe baking dish. Top with remaining coconut.
6. Bake in air fryer at 170 °C for ~30 min, or until a skewer comes out clean.
7. Cool slightly before slicing.
