Follow these steps to reactivate your starter when it’s time:
1. Hydration:
In a clean jar, add 5-10 grams of dehydrated starter to 50-60 grams of warm (not hot) water. Stir until the starter dissolves into a milky mixture.
2. First Feed:
Add 50-60 grams of flour to the mixture. Mix well, ensuring you get plenty of oxygen into the mixture. Cover loosely and let it rest in a warm place (around 78°F) for 12-24 hours.
3. Second Feed (and onwards):
After the first 12-24 hours, discard all but a small portion of the starter (e.g., 50g). Add fresh water and flour in equal parts (e.g., 50g water and 50g flour). Mix well and repeat the process, letting it rest for another 12-24 hours.
4. Monitor Activity:
Look for signs of activity, such as bubbles forming and the starter rising.
5. Repeat Feeds:
Continue feeding the starter every 12-24 hours until it becomes bubbly, active, and doubles in size.
