PALAK PANEER TOAST ( Serves 2)
Ingredients
1½ cups shredded spinach (palak)
100 grams cottage cheese (paneer), cut into 1 cm cubes
2 white bread slices
2 tbsps olive oil
2 tbsps chopped garlic
1 tsp red chilli flakes
Salt to taste
2 tbsps butter
1 tbsp chopped fresh parsley
Grated mixed cheese to sprinkle
Tomato ketchup for serving
Method
1. Heat olive oil in a small nonstick pan. Add 1 tbsp garlic and sauté for 30 seconds.
2. Add ½ tsp red chilli flakes and mix well.
3. Add spinach, salt and mix well. Cook for 2-3 minutes.
4. Add cottage cheese cubes and cook for 2-3 minutes.
5. Preheat the oven at 180°C.
6. Take butter in a bowl. Add remaining garlic, remaining red chilli flakes and parsley and mix well.
7. Place 2 bread slices on oven tray and spread the butter- garlic mixture evenly.
8. Toast in preheated oven for 4-5 minutes.
9. Take the tray out of oven and spread the cottage cheese- spinach mixture evenly on the bread slices.
10. Sprinkle mixed cheese and bake in preheated oven for 4-5 minutes or till cheese melts.
11. Cut into triangles and serve hot with tomato ketchup.
