This Cranberry Balsamic Glazed Chicken is bright, tender, and bursting with bold flavor. Fresh cranberries, rosemary, and balsamic come together in a gorgeous marinade that caramelizes beautifully in the oven. It’s a light, juicy, and elegant dish — perfect for weeknights and special occasions.

Ingredients:
Marinade:
• ⅓ cup fresh (or thawed) cranberries
• 2 Tbsp olive or avocado oil
• 2 Tbsp pure maple syrup
• ¼ cup balsamic vinegar
• 1 garlic clove, minced
• 1 tsp finely chopped fresh rosemary
• ¼ tsp kosher salt
• ¼ tsp black pepper
Chicken & Roasting:
• 2 lbs skinless chicken thighs
• ½–1 cup fresh cranberries
Glaze:
• 1 Tbsp maple syrup
• 1 Tbsp balsamic vinegar
• ¼ tsp Dijon mustard
• 1 tsp olive oil
Garnish:
• 2 Tbsp chopped parsley
• 1 Tbsp chopped basil
• Lemon zest
Instructions:
1️⃣ Blend marinade ingredients until smooth.
2️⃣ Coat chicken in marinade and refrigerate 30 minutes–24 hours.
3️⃣ Preheat oven to 375°F.
4️⃣ Place chicken in a baking dish, sprinkle cranberries on top, and roast 25–35 minutes (flip halfway), until chicken reaches 165°F.
5️⃣ Brush with glaze during the last 10 minutes of cooking.
6️⃣ Rest 5 minutes, spoon pan juices on top, and garnish with parsley, basil, and lemon zest.
