Recipes: 3 Healthy Egg Dinners

Desi Shakshuka
Ingredients
Eggs – 2Oil – 2 tspOnion – 1 small, finely choppedTomatoes – 2, finely chopped or pureedGinger-garlic paste – 1 tspTurmeric – ¼ tspRed chilli powder – ½ tspCumin powder – ½ tspSalt – to tasteFresh coriander leaves – for garnish
Method
1. Heat oil in a pan. Add onion and sauté till soft.
2. Add ginger-garlic paste and cook for 30 seconds.
3. Add tomatoes, turmeric, red chilli powder, cumin powder, and salt. Cook till thick and well combined.
4. Make small wells in the gravy and crack eggs into them.
5. Cover and cook on low flame until eggs are just set. Garnish with fresh coriander and serve hot.

10-Minute Boiled Egg Masala Roast (South Indian Style)
Ingredients
Boiled eggs – 3, halvedOil – 2 tspMustard seeds – ½ tspCurry leaves – a fewOnion – 1, slicedGinger-garlic paste – ½ tspTurmeric – ¼ tspRed chilli powder – ½ tspCoriander powder – ½ tspSalt – to taste
Method
1. Heat oil in a pan. Add mustard seeds and let them splutter.
2. Add curry leaves and sliced onion. Sauté till golden.
3. Add ginger-garlic paste, turmeric, red chilli powder, coriander powder, and salt.
4. Add boiled eggs and roast on medium flame for 2–3 minutes.
5. Toss till eggs are well coated and slightly crisp. Serve dry with salad or curd.

5-Minute Palak Egg Bhurji (Spinach Scrambled Eggs)
Ingredients
Eggs – 2Oil or butter – 1 tspGarlic – 1 clove, choppedGreen chilli – 1, choppedSpinach (palak) – 1 cup, choppedSalt & pepper – to taste
Method
1. Heat oil or butter in a pan. Add garlic and green chilli.
2. Add spinach and sauté for about 1 minute till wilted.
3. Add eggs, salt, and pepper.
4. Scramble on low flame till just cooked. Serve immediately.
Light, healthy, and protein-packed — perfect for dinner.
